Salmon & Veggie Loaded Quesadilla

Today's lunch was delish! Super easy whether you whip it up from scratch or toss in some leftover cooked veggies. Also a recipe like this is very versatile, making it easily modified to include/remove items to your preference.
What's your favorite quesadilla combo?
Step by Step Instruction:



Top a whole wheat tortilla w/ lite sour cream & quac or avocado slices.

Add baked sweet potato slices:
Set oven at 350F
Spray foil lined baking sheet with cooking spray
Add single-layer of thinly sliced sweet potatoes
Drizzle with a little olive oil and sprinkle on salt & pepper
Bake for 15 min or until tender

Optional: Add a little grilled salmon.

Place spinach on opposite side.

Layer on some sautéed veggies. I added red onion, yellow & green peppers, and mushrooms.


Top w/ spinach, cilantro, & cheese as desired.

Fold in half and heat of eat!
